Broccoli Paratha is made from whole wheat flour and broccoli. This is a healthy paratha for kids to have. Even better its perfect to put in their meal box. This roti is colorful and pleasant to look at for kids. It can be served with yogurt
Preparation Time: 60 Minutes
for Paratha Dough
Whole Wheat flour – 1.5 cups
Salt – ¼ tsp
Oil – tbsp
Water as required for kneading
for Broccoli Paratha Stuffing
Onion – ½ cup chopped
Grated or Minced Broccoli - 1 cup
2.5 to 3 cups water for blanching broccoli
Oil – 2 tsp
Green chili – 1 finely chopped
Ginger garlic paste – ½ tbsp
Garam masala powder – ¼ to ½ tsp
Dry mango powder (amchur powder) – ½ tsp
Salt as required
Oil as required for roasting
Mix flour, vegetable oil and salt in a bowl.
Add water and knead to make a soft dough.
Cover the dough and keep aside for 30 minutes.
Heat 2 teaspoons oil in a small pan. Add chopped onion & green chili. Stir.
Then add the minced or grated broccoli.
Mix very well and on a low flame sauté the broccoli.
Sauté for 2 to 3 minutes on a low flame.
Then add garam masala powder, dry mango powder & salt.
Mix all the ingredients to make the filling in a bowl.
Take lemon size ball of the dough and dust and roll it to make a 4-inch circle.
Keep a similar amount of filling in the centre and bring the ends together.
Dust and roll the paratha gently to make a 6-inch circle.
Heat a griddle.
Transfer the paratha on the griddle and cook until brown spots appear on the lower side.
Flip and cook on the other side as well.
Apply ghee or oil on both the sides and press and cook until crisp and nicely browned.
Serve hot with pickle and curd.
